For PC there’s a modern game called Aggelos, which feels, looks and plays just like an old Metroidvania, and is definitely one of the best ones I’ve ever played. Not gonna work on the Mister, though. Maybe a silly question, but you're using the menu/osd button after you load the core, right? F12 on keyboard, or whatever button/combo you setup on your controller. If the original hardware had a problem with Red Book it should show up with any proper music CD, not just with game discs.

Did you try actually restoring from the backup? I don't think Win supports unix symlinks, I'm not sure what explorer thinks a symlink is but text file is somewhat reasonable. If they have .txt extensions that's probably wrong, but if it's just that Windows wants to open them in a text editor you should try restoring a test folder and see what happe...
