I don't have a top 5 in mind right now, but one a my favorite game is "Sheep Raider" / "Sheep, Dog 'n' Wolf" ("Une faim de loup" in french, I don't know why there are two english names).
I really think it's the best looney tunes game on earth, lot of good mechanics and puzzles (and humor, of course)!
Final Fantasy VIII
Resident Evil 2
Gran Turismo 2
Alien Trilogy
Bugs Bunny Lost in Time
Herc's adventures
Tomb Raider 3 & 4
Crash Bandicoot 2
Metal Gear Solid
Driver
[EDIT]
Tekken 3 (how could I forget this one...)
Rayman
Abe Oddysee
[EDIT2]
Toy Story 2
Rugrats Search for Reptar (Loved that game for some reason )
Resident Evil series (Director's Cut especially)
Silent Hill
CastleVania Symphony of the Night
Final Fantasy VII
Wild Arms
Metal Gear Solid
Parasite Eve 1 & 2
Xenogears
Chrono Cross
Wipeout 2
Destruction Derby 2
and probably a lot more i just can't remember just now
At first, it was all about Ridge Racer & Tekken, proper arcade at home, amazing. Later on Driver, MGS & Syphon Filter, Wipeout and all the other hits (sans RE). The 3D was intoxicating and I think the only 2D game I had time for back then was Oddworld. Later on got completely addicted to Twisted Metal series, the AI was amazing and made the game immensely replayable. Tenchu was another cult classic. At the time I was still skeptical of JRPGS (CRPG fanboi) and didn't play any until years later.
These days I still love the original 3D gfx, I don't think it "aged badly" at all, in fact I think it has heaps of character because of its fuzzy wonkiness and what the devs managed to do with it all anyway (it's maybe even better than some rather bland PS2 games). For that, playing on a CRT helps immensely because it blends it all together, and looks too raw and jarring on modern panels for me...eg Silent Hill.
But, I have also came back to the-then unloved 2D on PSX, since games such as Castlevania or Lomax are simply jaw-dropping regarding the art. So these are my most played now, plus a few other titles I missed back then: Grandia, Vagrant Story, Einhander, Covert Ops, Parappa.
Based on what I loved at the time I would have to go with:
ISS Pro 98
Tekken 3
Ridge Racer Type 4
Gran Turismo
Metal Gear Solid
And if we include all games I would have to add:
Castlevania SOT
THPS2
Dance Dance Revolution
Gran Turismo 2
Resident Evil 2
FF8
Alundra
Klonoa
Point Blank
Soul Blade
Colin McRae Rally 1
Spyro
Crash Team Racing
Wipeut 2097
Soul Reaver
Games I have played and loved
Metal Gear Solid
Tony Hawk Pro Skater II
Final Fantasy VIII
Silent Bomber
Twisted Metal series
WWF games Raw / Smackdown
Grand Tourismo
Resident evil series
Army Men series
Spyro series
Ape Escape
Brave Fencer Musashi
NFL Blitz
Dead or Alive
Tekken series
Dance Dance Revolution
Parappa the Rapper
Mortal Kombat Trilogy
Now I want to try
Castlevania Symphony of the Night
Fear Effect
Thrill Kill (prototype)(EA you can go skrew yourself with a rusty fork for killing that game)\
Chrono Cross
Mortal Kombat 4
Time Crisis
(Pretty much any guncon game)
If we're talking about the sheer number of console exclusives, the PS1 has the most exclusives of any console I can think of. Even more than the NES. The PS1 covers every genre too. 2D/3D platformers, racing games (Arcade, Sim, Kart), RPGs (Action & JRPG), sports, 2D/3D fighting games, strategy, shmups, FPS, FMV, etc.
This is why I think the PS1 is the best console ever. It has the most balanced library ever and has just as many 2D classics as 3D classics. This is where the PS2 falters, lacking great 2D games. Also, the Xbox version of PS2 games were 90% of the time better than the PS2 version. Therefore, I think the PS1 is objectively the best console ever, and don't understand why it's so underrated in the "best console ever" debates.

You will start a console war if you launch the debate of the best console ever
PS1 is not so underrated. It have a great library and great games. But nowadays, 3D games on playstation are a bit ugly ... gameplay don't age, but 3D graphics does.
For example, I beloved Siphon filter, but when I played it recently on emmulator ... ooops it's ugly and framerate is just from an other age
Command & conquer was my favorite game, but again, framerate was sometimes 1fps when screen was full ...
But when the PSX core will be stable and palyable, I will enjoy playing back some games
- gran turismo 2
- resident evil series
- Siphon filter
- road rash
- GTA
I really enjoyed:
Suikoden
International Superstar Soccer Pro Evolution
Castlevania Symphony of the Night
Final Fantasy Tactics
Tekken 2
Super Puzzle Fighter 2 Turbo
Vandal Hearts
Bushido Blade
Xenogears
Little Big Adventure
Syndicate Wars
Metal Gear Solid
This is so difficult, as it was my only console during my college years...
Of the top of my head...
Battle Arena Toshinden 2
beatmania
Final Fantasy VII
Final Fantasy VIII
Final Fantasy Tactics
Metal Gear Solid
R4: Ridge Racer Type 4
RayStorm
Soul Edge
Super Puzzle Fighter II Turbo
Tekken 3
Wild Arms
Both Ridge Racer and Tekken 3 have superior core games at the arcade but both are better gaming experiences on the home format - bonus modes like practice and extended tracks and cars.
The Wipeout games were good but Wipeout Omega Collection on PS4 is the definitive Wipeout experience and I don't think I can go back to janksville.
Die Hard Trilogy is one of the best lightgun games ever and along with Time Crisis and Point Blank, make the PS1 the King of lightgun shooters. If only it had Virtua Cop <sighs wistfully>. Fortunately I have all three, a lightgun and a CRT TV, so I don't need them on MISTer.
I never really got into RPGs on the system and sports games have been improved in subsequent hardware iterations. For me, it's when the PS1 and the game matched perfectly and never really been bettered e.g. Driver.
WipEout 3SE (best version, 2097 second), Rollcage Stage II, Ridge Racer Type 4, Gran Turismo 2, all played with a neGcon controller.
Tekken 3
Metal Gear Solid
Syndicate Wars
Colin McRae Rally 1 (not sure if I played that with the neGcon)
Parappa the Rapper
Ace Combat 3, Japanese version, is so much better than the worldwide release, sadly I don't understand Japanese
To me PS1>PS2>PS3>PS4 looking at the amount of games that I enjoyed on them.
My go to games on the PS1 was Blood Omen: Legacy of Kain and Medievil. I also really liked Bushido Blade and Tekken 3. While I am not much for racing games, I did always find the Grand Turismo games impressive. Especially that you got to tinker with the engine and tune the cars.
